Firni is a popular North Indian sweet pudding made with rice, milk and dry fruits. There are a few variations of firni and this mango firni is one such variation. Mango Phirni ( Aam Payasam Kheer , Mango Rice Pudding) is a must in most North Indian weddings or festive occasions.
Mango Phirni Ingredients:
1kg full fat milk
4 tsp rice, 8 tsp sugar
3 tbsp mango pulp
pinch of cardamom powder
mixed nuts such as cashew nuts
almonds, pistachios,
walnuts
Mango Phirni Process to make:
- Soak the rice in water for 30 mins before hand. Grind this rice with a little amount of milk coarsly. Boil the milk in a pot and when the boils comes add the grinded rice powder. Stir this mixture continuously.
- When this mixture comes to boil, turn the heat to medium low. When it gets abit thick add the sugar, cardamom powder and all the dry nuts and mix them thoroughly until it becomes thick. It should not be too thick or too flowy. When it gets to this consistency turn off the heat.
- When it gets abit cooled down add the mango pulp and stir it. Serve it a in a broad bowl like mitti ka kasora because it takes the shape of whatever utensil you put it. Serve it cold and add slices of fresh mango on the top. Cool cool mango firni in this hot weather is ready for you.
